Product Details

This is two cooking surfaces in one piece of cast iron: a flat tawa side for dosas, rotis, and parathas, and a ridged grill side for paneer tikka, grilled vegetables, sandwiches, and anything else you’d want char marks on. Both surfaces benefit from the same heat retention and natural non-stick development that makes cast iron worth the extra weight and care.

At 30cm, it’s large enough for serious grilling portions and full-sized dosas, and the two side handles make it manageable to lift and turn despite being one of the heavier pieces of cookware you’ll own.

Size & Material

Diameter: 30cm

Material: Pre-seasoned cast iron, reversible flat and ridged surfaces

Care Instructions

Clean both sides after each use, even the side you didn’t cook on residue can carbonise and become harder to remove if left.
Use a stiff grill brush or a chain mail scrubber for the ridged side, which is more effective than a sponge between the ridges.
Dry both sides on the stove: heat briefly on a low flame, turning the pan, before oiling moisture between the ridges is easy to miss.
Apply a thin layer of cooking oil to both surfaces while the pan is still warm to maintain seasoning on each side.
Use both sides regularly a reversible pan seasons best with regular use on both faces, or the unused side may rust more easily.
Always use both handles and thick oven mitts when lifting this is one of the heaviest pieces of cookware in most kitchens.

I bought this as a birthday gift for my wife who loves cooking. She was initially slightly intimidated by the size and weight but once she got used to handling it she has not stopped using it. The grill side for appam batter edges and the flat side for proper dosas she has found creative uses for both. The cast iron quality from Tramontina is noticeably better than a branded competitor we had before. Smooth, consistent, and the seasoning is building up beautifully. An excellent gift for a serious home cook.

Very good reversible pan the grill side in particular is excellent for home grilling. The flat side takes slightly longer to season to a truly non-stick level than a dedicated flat tawa would, but that is the nature of a reversible pan. Use it on both sides consistently and it gets there. The weight is significant I would strongly recommend having the right oven mitts before ordering. Once you are set up for the weight it is a highly capable piece of cookware that earns its shelf space every week.

I was looking for a good grill pan for making paneer tikka and grilled vegetables at home. My wife suggested getting the reversible one so we could also use it for dosas. Best decision we made. The grill side makes beautiful tikka marks and the fat drains away so the food is less oily than pan frying. The flat side is excellent for dosas the heat retention is amazing. Two very different cooking functions in one very well-made piece of cast iron. Tramontina quality is evident in every aspect.
